THE RECIPE
Roasted Chickpeas:
15 oz can of chickpeas (drained and rinsed)
2 Tbsp olive oil
Chickpea seasoning:
2 tsp paprika
1 tsp cumin
1 tsp chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp sea salt
3 tsp brown sugar
2 pita bread
6 cups spring mix
1/2 cup feta, crumbled
1/2 cup ranch dressing
1/4 red onion, sliced
1/2 cup grape tomatoes, halved
DIRECTIONS
Preheat oven to 400 degrees. Mix the list of seasonings. Place chickpeas in a bowl and coat with olive oil, then stir in seasonings. Spread chickpeas evenly on a baking tray lined with parchment paper. Bake for 20 minutes, stirring once. When done set aside.
Cut pitas in half to make a pocket. Then place the spring mix, feta, ranch dressing, onion, grape tomatoes, and roasted chickpeas in a bowl and mix. Fill pitas with salad mix and serve.
The roasted chickpeas also keep well for a couple of days in a sealed container. So if you have them prepared ahead of time, it would not take any time at all to get a great tasting and healthy meal on the table to your family, in particular on those rushed nights.
For a low carb option, just omit the pita and turn your meal into a roasted chickpea Greek salad! Opa!
