BBQ season is here! Try these delicious homemade Quinoa Burgers!
Whether you are vegetarian, vegan or just looking for a great meatless meal, these Quinoa Burgers might be just for you! They can even be prepared gluten free! Quinoa Burgers are plant-based, packed with protein, high in fiber and contain numerous vitamins. They’re not only healthy but taste great too! Recipe
15 Oz Black Beans
1/4 Cup Quinoa
1/2 Cup Water or Vegetable Broth
1/2 Cup Bread Crumbs or Gluten Free Oats (grounded in a food processor or a blender)
1/4 Cup Bell Pepper (color of choice)
2 Tbsp Minced Onion
2 Cloves Minced Garlic
1 1/2 Tsp Cumin Powder
1/2 Tsp Salt
1 Tsp Hot Sauce (we use Sriracha)
1 Egg*
*To make this recipe vegan, take 1 tablespoon of Chia Seed and add it to 1/3 cup of water. Mix it and let it sit for 15 minutes. This will equal one egg in any recipe.
Directions
- Bring quinoa and water or vegetable broth to a boil. Reduce heat to a low simmer, cover and cook for 15 minutes or until liquid has been absorbed. Fluff with a fork.
- Roughly mash the black beans until it is paste-like but leave some chunky pieces.
- Mix quinoa, bread crumbs, bell pepper, onions, garlic, cumin, salt, hot sauce and egg into black beans.
- Form 5-6 patties.
- Brush burgers with a little oil. Cook on BBQ or stove top for 2-3 minutes per side or until golden and heated through.
Freezer Meal Tip: After you form your patties before cooking, you can take squares of wax or parchment paper and place them between your Quinoa burgers, put them in a freezer bag and freeze until ready to use. We’ve defrosted them and cooked them from frozen and weren’t disappointed any time. *Cooking time will vary if cooked from frozen. Enjoy!
